Battlestar Galactica DVD/Blu-ray Binder (5 photos)
Pictures of my custom binder for my Battlestar Galactica Blu-ray and audio CD collection. The credit for this concept goes to Bill Hunt at Digital Bits, who wanted a better packaging for his original series set of DVDs. I did, however, create a custom guide in the booklet format, as well as an ink-conservative version of disc inserts, and have made instructions on how I made my own. You can find out more HERE

Tacos, Tacos, Tacos (2 photos)
Everybody likes tacos, right? Here’s my recipe for the traditional favorite:
Ingredients:
1lb ground chuck (pork or turkey)
4-oz. can of green chiles
taco seasoning (to taste)*
Tortillas or taco shells
Cheese & taco fixings of your choice
* I make my own taco seasonings, but your favorite packet mix will probably work. My particular taco seasoning, if you wanna use the same ingredients, features chili powder, garlic powder, two kinds of fajita seasoning (one salt-free, the other mesquite-flavored), and dried cilantro.
Instructions:
Brown meat in medium-sized skillet then add the green chiles. Once chiles are mixed in, add the taco seasoning and stir.
If not enough moisture to stir in seasoning well, add a little water.

Strawberry-Hatch Chile Compote (4 photos)
A sweet, mellow, tart treat with a little heat for the strawberry season!
Ingredients:
Per serving…
2-3 medium-large strawberries
1 tsp brown sugar
1/4 tsp lime juice
1 Tbsp fresh-roasted Hatch chile, peeled & diced
1.5-2 Tbsp heavy whipping cream
Instructions:
Rinse then slice strawberries into a small bowl. Add diced chiles, brown sugar, lime juice, and heavy whipping cream. Microwave for 20 seconds and serve.
For more heat, use the medium or hot variety of Hatch chiles!

Texas State Aquarium (54 photos)
A visit to the Texas State Aquarium in Corpus Christi, Texas, was a great adventure. I was impressed with the exhibits, which I consider equal to -- and perhaps better than -- those of SeaWorld San Antonio. I concede, however, that SeaWorld, as a commercial venture has more entertainment options with its shows featuring various sealife. (1/23/11)
